Cook Once

Flax Dressing

Yields: 1 cup

Cook time:

¾ cup flax seed oil

¼ cup apple cider vinegar

1 tbsp Dijon mustard

1 tbsp Bragg’s or Tamari sauce

2-3 garlic cloves, crushed

½ tsp tarragon

½ tsp oregano

2 tbsps maple syrup

½ tsp sea salt

fresh ground pepper

Preparation:

  1. Blend all ingredients except oil in blender or food processor for 10 seconds. Mix with oil. Store in a sealed container in the refrigerator to protect the EFAs in the flaxseed oil from going rancid. Dressing will keep for several days.

MMM Tip:

Flax oil should never be heated or it will turn rancid. Use the oil cold for salad dressings or drizzle on cooked food once it is removed from the heat source. All flax products should be stored in the fridge or freezer for no more than 3 months. Whole flax seeds are not easily digestible so buy vacuum-sealed ground flax or grind the seeds yourself with a clean coffee grinder.

Flax Seed & Coconut Oil Spread

Yields: 1 1/2 cups

Cook time:

1 cup extra virgin coconut oil
½ cup flax seed oil

Preparation:

  1. Place flax seed oil in the freezer for at least 2 hours.
  2. Melt the coconut oil at a low temperature. Remove from heat and add the chilled flax seed oil. Blend and keep in the refrigerator for up to 6 weeks.
  3. Store in an opaque container to prolong life. Not for cooking or baking. Great to spread on toast, vegetables, crackers, and bagels.

Peanut Butter Flax Bars

Yields: about 21 bars

Cook time:

1 cup creamy peanut butter
1 cup honey
1 tsp vanilla
1 cup freshly ground flaxseed
5 cups rice crisp cereal

Preparation:

  1. In a microwave-safe bowl, mix together the peanut butter and honey. Microwave for about 1-2 minutes.
  2. Stir in the ground flaxseed and vanilla, then pour the mixture over rice crisp cereal and mix well.
  3. Coat a 9x13 inch baking pan with olive oil. Spread the mixture into the pan and press down to form a dense sheet. Let the mixture cool in the refrigerator 10-15 minutes, until firmly set, then cut into bars.
