Pancake Trio

Pancake Trio

Well we ran out of bread again at home and some of our best recipes come from a missing ingredient. Dakota loves her grill cheese and using banana bread from our Banana Bread Trio on page 38-39 from our Second Edition C1P2 Cookbook, just got me thinking of the same solution the last time we made these pancakes. For me it is the lemon zest that makes this my favorite pancake!

Oatmeal for the Soul

Oatmeal for the Soul

Oats are loaded with a soluble fibre called beta-glucan which has been proven to help lower cholesterol levels.  Their antioxidant properties also help protect the healthy LDL cholesterol from free radicals. In this trio, we create a big batch of hearty oatmeal cookie dough which can be added to buckwheat pancakes or baked as is and made into ice cream sandwiches.

Banana loaf for me is a classic just like my favourite pair of jeans...comfort all the way!
