Triple Threat Turkey

Ground turkey is the new beef. It is much leaner than ground beef, very high in protein and easier for most people to digest. This recipe trio has quickly become a favourite as it doubles up to create not only an outstanding meatloaf but also meatballs that can be made into a new family favourite; Gnocchi and Turkey Meatball Soup or frozen for later use.
Difficulty Level: EasyCook Once: Prepare Ground Turkey Mixture
3 cups chopped yellow onions
2 garlic cloves, minced
2 tablespoons olive oil
2 teaspoons Kosher salt
1 teaspoon freshly ground black pepper
1 1/2 teaspoons fresh Thyme leaves
1/3 cup Worcestershire Sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
4 pounds ground turkey
1 1/4 cups plain dry bread crumbs
3 extra-large eggs, beaten
- Preheat oven to 350 degrees F.
- In a saute pan, on medium low heat, cook the onions, garlic, olive oil, salt, pepper and thyme leaves until the onions are translucent.
- Add Worcestershire sauce, chicken stock and tomato paste and mix well. Allow to cool at room temperature.
- Combine turkey, bread crumbs, eggs and onion mixture in a large bowl.
Turkey Meatloaf
Yields: 1 meatloaf
Cook time: 30 mins
1/4 cup chilli sauce
Preparation:
- Take 1/2 of turkey mixture and form into a loaf on a baking sheet or in a loaf pan, pour chilli sauce over top and cook for 50 minutes or until an internal temperature of 170 degrees F.
- Take balance of turkey mixture and proceed to Produce One recipe.
MMM Tip:
If you have a wheat or gluten sensitivity, substitute breadcrumbs with quinoa flakes. They are gluten-free and packed with fibre and work well to help hold the turkey mixture together.Produce One
Turkey Meatballs
Yields: 10 meatballs
Cook time: 15 mins
Preparation:
- Take balance of turkey mixture from Cook Once and form into individual palm-sized meatballs. Set aside 10 meatballs for Produce Two recipe.
- Place remainder on parchment paper lined baking sheet.
- Take tray and store in freezer for 1/2 hour or until meatballs become hard.
- Portion in plastic freezer bags according to your family size and freeze for later use.
- Proceed to Produce Two recipe!
Produce Two
Gnocchi & Turkey Meatball Soup
Yields: 8-10 cups
Cook time: 15 mins
10 turkey meatballs from Produce One step
1 package store bought Gnocchi
1/2 cup diced celery
1/2 cup diced carrots
1/2 cup diced onions
2 tablespoons olive oil
6-8 cups chicken stock
Salt and pepper, to taste
Preparation:
- In large pot, heat olive oil; then add onions, carrots and celery.
- Cook 10 minutes, stirring frequently, until tender.
- Add chicken stock and bring to a boil.
- Add meatballs and continue to cook for 2 minutes.
- Turn heat down to a simmer.
- Cook 12 minutes more, adding salt and pepper to taste.
- Add Gnocchi and cook for 2 minutes.
