Pineapple Growing

Aloha Pineapple Trio

Aloha, our trip to Hawaii brought out the Pineapple in me! Love Pineapple and although not seasonal in North American, the Hawaiian pineapple in stores is definitely more juicy. Our pineapple trio takes a turn on traditional salsa and when cutting a pineapple the versatility for more dishes has inspired our P1 and P2.

3 Things to do with Flaxseed

The benefits of omega-3 fatty acids are quickly becoming the new health mantra and flax, in its many forms, is topping the list. The abundance of research suggests that incorporating flax into our diets is a smart choice to improve overall health. In the U.S. and Canada, much more research is underway to identify how flax may help with cancer prevention. For many of us, the confusion lies in how to use and store this delicate food properly. This recipe combination produces a delicious salad dressing, healthy spread for crackers or bread and a sweet treat; all very different ways to incorporate flax into your diet. Pancake Trio

Pancake Trio

Well we ran out of bread again at home and some of our best recipes come from a missing ingredient. Dakota loves her grill cheese and using banana bread from our Banana Bread Trio on page 38-39 from our Second Edition C1P2 Cookbook, just got me thinking of the same solution the last time we made these pancakes. For me it is the lemon zest that makes this my favorite pancake!

Stuffed Chicken Pockets

You may be starting to see a trend in this book when it comes to what meats we choose to eat. We have all spent a great deal of time coming up with tasty and economical poultry dishes as our main meat dishes while incorporating the occasional splurge with beef and new ways to enjoy fish. Stuffing chicken breasts gives the chicken a ton of flavour and also springs us into our next two dishes by using the leftovers for Chicken Salad Bowls and Chicken Caesar Salad.

But have you ever thought about how to take the extra and actually turn them into another meal? We love this combination because it gives you the flexibility to use meat or make it vegetarian. By doubling the Cook Once Chili recipe, you can set up two more meals; Mexican Lasagna and Sloppy Joes!

Salad Dressing

Caesar Salad Dressing

Creating a winning salad dressing is the difference between eating a salad for the sake of getting your greens and devouring it then talking about it to everyone you know. This creamy roasted garlic dressing is a winner in our books so we didn’t want to disappoint by only using it to top your greens. We turn this dressing into a tangy chicken wrap and make it a great dip for appetizers.
